I would like to setup multiple projects for our Product. One for Enhancements, Bugs, and Data Requests. The reason for multiple projects is that Each type will have different statuses as they progress through the system. For example, Enhancements will have In Dev, In QA, Qa Verified, etc... while Data Requests will have Assigned, Working, Data Verified, etc...

The question I have is: Is it possible to have a Version that has issues from different projects, as bugs and enhancements may go in the same release? Or, am I approaching this from the wrong angle? Is it possible to drive the Status selections based on Issue Type?

You should have all this in the same project. With 3.6 you can set status workflow per issue type, so that should take care of your different statuses and workflow.
